Caramelised Onion Pasta

This has been one of the most drool-worthy recipes on my feed lately, so I had to give it a go for you guys! I honestly have this meal so often and it’s always requested by my friends when they come over for dinner!

Ingredients

2-3 servings pasta, cooked

2 onions, sliced
pinch salt
2 cloves garlic, crushed
250ml soy cream (sub soy milk)
1 stock cube
2 tbsp nutritional yeast
1 tsp miso paste
1/2 cup pasta water

Crunchy chickpeas to top
Vegan parmesan to top
Chopped parsley to top

Optional ingredients:
Chopped sundried tomatoes
Chilli oil

Method

Fry sliced onions in 1 tablespoon of olive oil over low heat until they are soft. Add two tablespoons of water to deglaze the pan if the onions ever start to stick.

Add salt and garlic, and fry for another 3 minutes. Then, add cream, stock, nutritional yeast, miso, and pasta water, and simmer on low for 10 minutes.

Add cooked pasta and stir through the creamy onion sauce. Serve and top with crunchy chickpeas, vegan parmesan and chopped parsley.
